A Great Rice-producing Region is a Great Sake-brewing Region-The Japanese Sake Culture of Hokkaido Cultivated and Handed Down from our Forefathers

For many years, Hokkaido faced challenges because it was thought that the region, being so cold, was not suitable for rice cultivation. However, through the wisdom of its forefathers, combined with Hokkaido's unique technology and selective breeding, they developed rice varieties that are resistant to cold and of high quality. Thanks to these efforts, Hokkaido is now highly regarded as one of Japan's leading sake rice-producing regions.
Eighty percent of sake is made up of water, and in addition to high-quality rice, water is a crucial element for brewing delicious sake. Hokkaido is blessed with excellent sources of water, including pure snowmelt and subterranean river water. The cold winters also make it difficult for bacteria to thrive, making the region ideal for sake production. In Hokkaido, sake is brewed utilizing these natural environmental conditions.

Three Varieties of Sake Rice Produced in Hokkaido

Since the cultivation of "Hatsushizuku" in 1998 (Heisei 10), three varieties of sake rice — "Ginpu," "Suisei," and "Kitashizuku" — have been grown in Hokkaido.
Hokkaido's sake rice is known for its low protein content, comparable to rice grown in other prefectures, and boasts high quality. In recent years, not only within Hokkaido but also nationwide, an increasing number of breweries are choosing to use Hokkaido's sake rice, gaining many fans year by year.

Hokkaido's Prideful Sake Rice

Hokkaido was once considered unsuitable for cultivating sake rice due to its cold climate. However, through years of selective breeding and innovation, Hokkaido succeeded in developing sake rice varieties that can withstand the cold and contain a "shinpaku" (※), an opaque core essential for sake brewing. Today, Hokkaido produces three varieties of sake rice.
The most widely produced sake rice in Japan is "Yamada Nishiki," but sake brewed with Hokkaido's sake rice offers distinct characteristics compared to those made from Yamada Nishiki.
※ (Shinpaku contains fine gaps where koji mold can penetrate to promote fermentation. Rice with shinpaku is ideal for sake brewing.)

    吟 風

    Registered as a sake rice variety in 2000, Ginpu has a large, thick shinpaku with a high incidence rate. It is known for producing sake that is full-bodied with rich and bold flavors.

    Suisei
    彗 星

    Suisei was created in 2006 by crossbreeding Hatsushizuku and Ginpu. It has a low protein content, and like Ginpu, it has thick, large grains with high yields. Suisei's aroma and flavor are mild, producing a light and dry sake with a crisp finish
  • きたしずく

    Kitashizuku
    きたしずく

    Introduced in 2014, Kitashizuku is the newest sake rice variety from Hokkaido. It offers three major benefits: a well-developed shinpaku, large grains with excellent cold resistance, and high yields. Kitashizuku produces sake with a soft, gentle flavor that balances between the richness and sweetness of Ginpu and the dry, crisp qualities of Suisei.
